Ingredients
• 1 whole cooked ham (4-5kg)
• 1/2 cup brown sugar
• 1/4 cup Dijon mustard
• 1/4 cup honey
• 1/4 cup orange juice
• 2 tbsp apple cider vinegar
• 1 tbsp whole cloves (optional)
Instructions
1. Preheat your BBQ to medium heat.
2. Score the skin of the ham in a diamond pattern and, if using, stud each diamond with a clove.
3. In a saucepan, combine the brown sugar, Dijon mustard, honey, orange juice, and apple cider vinegar. Simmer over low heat until the glaze thickens slightly.
4. Place the ham on the BBQ (indirect heat is best) and brush it generously with the glaze. Cover the BBQ and cook for 1.5 to 2 hours, basting every 20 minutes.
5. Once the ham is caramelised and heated through, remove it from the BBQ, let it rest, and then slice to serve.
